We’ve had a play around with some easy, kid-friendly Easter inspired recipes this weekend so we could share them with you in time for the Easter holidays. We’ve intentionally chosen easy peasy (mostly fridge-bake type recipes) so the kids can have fun without the fuss. I’m sure we’re all about to be over run with chocolate of various kinds so it’s a good way of using it up and sharing with family and friends. They make lovely little gifts that can be safely dropped on door steps!
First up was our favourite. Marshmallow Rice Krispie bars. These took me right back to school and honestly there’s nothing more satisfying than melting marshmallows. The layer of white chocolate on top makes these proper yummy – they went down a treat with the whole family. There really aren’t many steps. You just melt the butter with the marshmallows, add the Rice Krispies and stir. Pour them into a dish and push down so they form a big, compact bar. While it’s cooling melt your white chocolate and then pour onto of the Rice Krispies. Then just sprinkle on whatever treats you prefer on top and leave to set in the fridge. They are definitely the yummiest quick recipe of it’s kind I’ve ever done and they look really quite pretty, making them nice to give to friends and family to offload some of that easter chocolate.

Next up we made the super easy Rocky Road I found online that only uses four ingredients – Chocolate, digestive biscuits, mini eggs and mini marshmallows. Rocky road is always a good one because you can chuck in whatever the kids (or you) favour. Dried fruit, chocolate biscuits, dark, milk or white chocolate etc. The recipe uses Cadbury’s but we used a cheaper baking chocolate and it was still really good. We just melted the chocolate, bashed the digestives (which obviously my kid loved doing), chucked in the marshmallows and mini eggs, left in the fridge for an hour and voila!

NB – remember that Mini Eggs can be a choking hazard for little ones so you may want to bash them up into pieces, or substitute them for something else.
I’m not sure our next discovery can be considered baking, but it was great fun. We used ‘Northern Co Dough’ for the base of our Chocolate Pizza and it worked really well. I put it in the oven on a pizza tray. It did puff up as it didn’t have any toppings on it but it relaxed once out of the oven and we had given it a good poke. I pretty much followed the topping ideas from the recipe but you could use anything you and the kids love. It would be amazing with some of the fancy spreads available now like chocolate orange or caramel spread. It was really yummy piled up with strawberries and raspberries which I suppose gets a portion of fruit into the little ones too. Banana would also be great! We made it for a special extravagant breakfast, I mean, it’s not that different to chocolate spread on toast… is it?

Simple Easter Biscuits – Easy to make and really fun to decorate, especially if you have creative kids. There’s no chocolate in the biscuit recipe which is handy if you’re sick of the sight of it!

My husbands top pick in general is always Cornflake Cakes. Always a favourite, everyones made them haven’t they? So I won’t insult you with instructions but I did find a simple recipe that also uses peanut butter which I haven’t tried before. Yum!

One that requires a little more effort but that I will be trying is this Carrot Cake Tray Bake. Now that we can meet up with friends and family outdoors (including gardens!) this would be a lovely one to share outside with a brew. (Come on sunshine, you can do it, we believe in you!)

A refreshing change from chocolate and another really simple recipe, are these Frosted Lemon Fairy-cakes. Theres no messing about with buttercream, it’s just good old ‘glace icing’ which is just icing sugar and in this case, lemon juice (normally water). They’re a real reminder that spring is here and we can breath a massive sigh of relief for that reason alone!
